Ortolana literally means greengrocer/farmer and it's usually a flavor where you can dump all the vegetables you desire to create a unique field of flavors and textures.
Our choice of veggies is a base of chopped friarielli (an italian type of Bimi/stem broccoli), oven potatoes, grilled zucchini and red peppers with some scamorza on top (none in the vegan version).
